ROASTED AUBERGINE AND RED PEPPER WITH WHML COUSCOUS MINT & FETA CHEESE + MULTI SEED BOND

Ingredients:

1 red pepper cut in half without seed.2 large firm eggplants and cut into slices. 2 cm thick.

Olive oil.2 cloves crushed garlic.Juice of one lemon1 teaspoon crushed cumin seeds.

50 gm of vegetable crumbled feta.

2 tablespoons chopped fresh mint leaf.

Sea salt flakes.

Pepper.
